There is no substitute for the complex nutty flavors of this Spanish sherry vinegar. Grapes are aged in oak barrels previously used for sherry. The longer it ages the more concentrated, darker and sweet the vinegar will become. The "PX" sherry vinegar is aged 4 years and is made from the sweeter and more acidic pedro ximenez grape.
