This southern Italy family estate harvests their Gentile di Chieti and Intosso olives olives early in the season and press them within 6 hours of harvest. This results in a lower yield of oil with a higher level of antioxidants, extra-low acidity and a more robust aroma and flavor. This is a fruity oil with hints of almonds and a spicy finish and is great with pasta and for bread dipping.
